Cascarilla bark – Grown in a few of the Out Islands and used to flavour Campari and Vermouth. Kalik Beer – Brewed in Nassau and named after the sound of cowbells at Junkanoo. Bahamian refreshers – Drinks such as coconut water blended with sweet milk and gin enjoyed by the locals. Conch – A mollusc with firm, white meat that can be enjoyed a variety of ways; raw with lime juice and spices, deep fried, steamed or made into conch chowder or conch fritters. Bahamian rock lobster – A spiny lobster without claws. Land crabs – Enjoy boiled or baked. Souse – A traditional thin soup made with onions, lime juice, celery, peppers, meat and water.
